Potato Leek Soup

Ingredients

  • 2 slices thick bacon (optional)
  • 3 leeks, whte and light green parts, thinly sliced
  • 3 celery stalks, chopped
  • 2 tsps fresh thyme leaves
  • 2lbs potatoes peeled and cut into 1inch pieces
  • 4 cups low-sodium chicken broth
  • kosher slat
  • 1 cup heavy cream
  • Freshly ground black pepper

Cookware

  • large heavy pot
  • immersion blender / countertop blender

Steps

  1. In a large heavy pot over medium heat fry the bacon until browned (~13mins). Bacon to paper= towel.
  2. Add the leeks, celery, and thyme to the pot and cook
    1. stir until veggies soften
    2. Add potatoes, broth, and 1tsp salt
    3. Simmer until potatoes are soft ~15 - 20mins
  3. Remove the soup from the heat.
