Potato Leek Soup
Ingredients
- 2 slices thick bacon (optional)
 - 3 leeks, whte and light green parts, thinly sliced
 - 3 celery stalks, chopped
 - 2 tsps fresh thyme leaves
 - 2lbs potatoes peeled and cut into 1inch pieces
 - 4 cups low-sodium chicken broth
 - kosher slat
 - 1 cup heavy cream
 - Freshly ground black pepper
 
Cookware
- large heavy pot
 - immersion blender / countertop blender
 
Steps
- In a large heavy pot over medium heat fry the bacon until browned (~13mins). Bacon to paper= towel.
 - Add the leeks, celery, and thyme to the pot and cook
- stir until veggies soften
 - Add potatoes, broth, and 1tsp salt
 - Simmer until potatoes are soft ~15 - 20mins
 
 - Remove the soup from the heat.
